Asian stir-fry with v2mince by Shu Liu

Ingredients

  • 1 tbsp finely chopped ginger
  • 2 cloves crushed garlic
  • 2 tbsp chopped spring onion
  • 200g v2mince
  • Handful of diced carrots, green beans, shiitake mushroom (or any preferred fresh vegetables)

For the sauce

  • 6 tbsp vegetable oil
  • 1 tbsp Shaoxing wine
  • 2 tsp vegetarian oyster sauce
  • 2 tsp light soy sauce
  • ¼ tsp dark soy sauce
  • ½ tsp sugar Salt to taste

Instructions

Step 1

Heat the vegetable oil in a seasoned wok over high heat. Add the ginger, garlic, spring onion and stir-fry briefly until it turns golden and aromatic.

Step 2

Add the v2mince and stir-fry until it sizzles, breaking v2mince into small pieces with a wok spoon.

Step 3

Add in the Shaoxing wine. After half a minute on medium heat, tilt the wok and push the v2mince up one side so the oil pools in the base. Add the remaining seasoning with the diced vegetables into the oil and continue frying for another 2 minutes. Tilt the wok back and stir in the mince with salt to taste.

Step 4

Scoop everything onto steamed jasmine rice, then enjoy!
